Multigrain Blueberry Pancakes with Fresh Fruit Parfait

Prep: 3 minutes Cook:6 minutes.
Yield: Makes 3 servings (serving size: two 5-inch pancakes)


Multigrain Blueberry Pancakes

  • Fresh Blueberries
  • Multigrain Pancake Mix
  • Soymilk
  • Canola Oil
  • Blueberry or Maple Syrup

Preparation:
1.Combine the blueberries, multigrain pancake mix, soy milk, and canola oil. Mix until
well blended.
2.Pour about 1/4 cup batter (use a 2-ounce ice-cream scoop) per pancake onto a hot
nonstick griddle or skillet. Cook over medium heat for about 2–3 minutes or until the
tops are covered with bubbles and edges look cooked.
3. Flip the pancakes over and cook an additional 2–3 minutes or until bottoms are
golden brown. Pile pancakes on a plate in 1 stack. Cover with a hand towel to keep
warm.
4. When ready to serve, place the pancakes on the various plates and drizzle with the
blueberry syrup.


Fruit Parfait

  • Honey Vanilla Yogurt
  • Honey Roasted Granola
  • Select Fresh Fruit such as Bananas, Strawberries, Raspberries (Make sure it’s colorful like the rainbow! :-)

Preparation:
Rinse and combine fresh fruit. Layer 1/3 cup yogurt into the bottom of each glass.
Spoon 2 tablespoons of granola over yogurt. Spoon 2 tablespoons of fruit mixture over
granola. Have fun alternating each layer until glasses are filled to the top of rainbow
deliciousness. Serve immediately to keep the granola crunchy.
