Hidden Omakase serves up a Summer favorite while continuing its comeback story
Houston – One of Houston’s most acclaimed dining experiences is proving that resilience can be just as memorable as the meal itself. Hidden Omakase, the Michelin-recommended restaurant known for its creative, vegetable-forward tasting menus, is continuing to welcome guests this summer from its residency at Bar Moon after an unexpected setback forced the team to rebuild.
Executive Chef Marcos Juarez joins Houston Life today at 1 p.m. to share the story behind the restaurant’s comeback and prepare one of the standout dishes from the current seasonal menu: the Tuna and Squash Tart.

INGREDIENTS
Tart shell
Grilled Zucchini and squash tossed in a Meyer lemon sesame vinaigrette.
Bluefin tuna
Thai Basil puree
Kaluga caviar
DIRECTIONS
Toss zucchini and squash with Meyer lemon sesame vinaigrette.
Fill the tart
Top with basil puree, then put tuna sheet on top, and a dollop of caviar.
