Houston – The holidays are here and a lot of us are already thinking about how to make that big meal feel a little more special. For plenty of families, a perfectly cooked steak is the answer. ‘Houston Life’ welcomed 44 Farms Chief Operating Officer BJ McElroy to walk us through what sets their beef apart and how home cooks can get restaurant-level results in their own kitchens.
BJ shared the story behind the Cameron, Texas-based ranch, a fifth-generation operation known for its Black Angus cattle and long-standing reputation across Texas. From supplying genetics to ranchers nationwide to being one of the first beef partners for James Beard Award winner Chris Shepherd, 44 Farms has a deep history in both ranching and the restaurant world.
When it comes to choosing the right steak, BJ explained that marbling is key. Those tiny white flecks of fat are what give each bite its juicy, buttery flavor. At 44 Farms, every steak is USDA Prime or Choice and part of their “never ever” program, meaning the cattle are never ever given antibiotics or added hormones. It’s a big part of why their beef tastes so tender and rich.
For cooking at home, BJ walked us through a simple reverse-sear method. Start the steak low and slow in a 275-degree oven until it reaches an internal temperature around 120 degrees. Give it a rest, then finish it in a hot cast-iron pan with beef tallow or a high-smoke-point oil. After a quick sear on each side, you’re left with a steak that’s beautifully crusted on the outside and medium-rare on the inside.
