3 oz. Jumbo Lump Crab

3oz. Heavy Cream

¼ oz. Shallots

1oz. Capers

2 pieces of Crostini

¼ oz. Parsley

1oz. Leek  Oil

To make crostini, slice a roasted garlic sour dough loaf in to sandwich size slices. Brush with olive oil, season with salt and pepper and grill on your gas or charcoal grill.  Grill two minutes on each side, rotating the slices a half turn on each side after one minute.

In a sauce pan bring heavy cream and shallots to a boil and cook until reduced by 1/3.  It should heavily coat the back of a spoon.  Then add capers and crab to warm.  Season with salt and pepper to taste.

Pour over crostini and garnish with fresh parsley and leek oil.
