Cookin' Time with H-E-B: Bacon corn, armadillo eggs, chocolate mousse, beans

Bacon Corn
Prep and Cook Time: 15 minutes
Serves:  4-6

 

Ingredients:


16oz bag of frozen corn
2-3 TBL of Better Than Good Bacon Jam
3 TBL Butter 1 TBL Olive oil
A bit of your favorite Adams Reserve Rub
Options: add some garlic, red peppers and/or sweet onion

Procedure:


• In a lg skillet melt the butter and add the olive oil over medium heat
• Sautee corn and any additions 10 minutes or so until tender
• Stir in the BTG Bacon Jam heat 4 minutes
• Season to taste with your adams rub

Roasted Pineapple Mango Armadillo Eggs
Prep and Cook Time: 40 minutes
Serves:  4-6


4-6  Armadillo’s Eggs
1 bottle of Roasted Pineapple Habenero sauce
1 pkg of Mango Pico de Gallo (drained)
• Follow pkg directions and cook your armadillo eggs
• Mix the two other ingredients and warm in a saucepan
• To serve Slice the armadillo eggs and splay out on the plate then take the sauce and spoon it over, just cover don’t smother
A really delish dish.!

    
  ChocoLotta Love Mousse
  Prep/cook Time :20-25 mins.

     

Ingredients:


2 Cups of Heavy Whipping Cream
1 small pkg of Instant chocolate Pudding mix
½ cup  of Oh My Ganache
1 box of crushed chocolate cookies
 

Procedure:


• Mix or whip your Oh My Ganache(loosen the ganache to a more liquid state) and heavy cream  together Beat in the pudding mixture until it gets thick and yummy
• Spread a layer of this mixture in your serving dish
• Sprinkle a layer of crushed cookies
• Another layer of mousse and finish with the remaining

Soppin Beans


Ingredients:

4 cans of cooked beans YOUR choice
           ½  jar of your Red Bodacious Soppn Sauce
           1 lb Ground meat YOUR choice (we used ground beef)
           ½ lb of cooked bacon
           ½ yellow onion cut small
           2 tbsp Adam’s Reserve  Rub YOUR favorite (we recommend House, Southwest, or Val Verde)

Procedure:

1. Brown ground meat, and yellow onion with house rub in pot
2. Drain and rinse beans, add to meat mixture
3. add Marinade to meat and bean mixture and simmer for 20-25 minutes
