Cookin' Time with H-E-B: Salmon and veggies in foil topped with pesto

Prep Time: 5 minutes

Serves: 4-6

Cook Time: 10 minutes


4 Salmon filets skinless, or favorite fish

4  tablespoons Artigiana Genovese Organic Pesto

2   Small Zucchini sliced into half moons

2   Small Yellow Squash sliced into half moons

2 Tbsp. Ottavio Olive Oil

2  Large Roma Tomatoes (diced)

2 Tbsp. Adams Reserve  Rub


    Preheat oven to 400 degrees. Cut 4 sheets of Aluminum foil into 4 squares  ( 17-inch Lengths)
    Toss zucchini, squash together Season with rub and olive oil and  Divide  among  4 sheets of foil place in the center of foil. Then place fillet over each of veggies on foil then put rub on each fish then 1 Tablespoon of pesto on each fillet. Then top with  tomatoes wrap up foil bake for 25-30 minutes carefully open foil packet and serve warm
