Cookin' Time with HEB: Savory salads

Fresh Fruit Salad
Prep Time: 30 minutes
Chill time: 1 Hours or More

1       lb. Fresh Strawberries, cut into quarters
1       lb.  Cantaloupe, large diced
1       lb.  Watermelon, large diced
1       cup Cookwell and Company Watermelon Vinaigrette
1       Cup Greek yogurt or Sour Cream
1       TBSP Cracked Pepper (optional)

STEPS
1. Mix all ingredients, Refrigerator for 1 hour.
2. Serve chilled.

This makes a great melon-ball salad: you can use grapes, honeydew melon, pineapple and any of your favorite seasonal berries!

 

Cauliflower Summer Salad
Preparation Time: 10 minutes
Serves 4 to 6
1 package spring greens  Salad
1 tub HEB cauliflower rice
¼    cup H-E-B fully-cooked bacon, chopped
1  cup Canyon Foods Garlic Essence Vinaigrette
• Combine everything except dressing in a large bowl and cover..
• Toss in dressing right before serving.

 

Asian Chopped Salad

Prep Time: 5 minutes

      INGREDIENTS
1       Bag      shredded coleslaw mix
1       lb         sautéed shrimp
1       Cup      bell peppers, sliced
1/3    Cup      chopped green onions
2       Tbsp     chopped cilantro
3       Oz.       Mama Tangs Spicy Asian Vinaigrette


       STEPS
1. Heat sauté pan with 1 Tbl avocado oil.  Saute shrimp 4-5 minutes.  Set aside.
2. Toss all but the shrimp together with dressing. 
3.  Top salad with shrimp to serve
