Herb Crusted Fish with Artichoke Tomato and Basil Oil Relish

2 fillets fresh Atlantic salmon
1 tbsp HEB Bread Dipper
2 tbsp Ottavio Private Reserve Olive Oil

1. Season fish.  Heat skillet on med heat, add oil to skillet.
2. Sear fish for 3-4 minutes each side or until internal temp reaches 150 degrees.

Artichoke Tomato & Basil Oil Relish
½  cup Ottavio Private Reserve Olive Oil
½  cup chopped sundried tomatoes
½  cup chopped artichokes
2 tbsp parmesan cheese
8  leaves fresh basil, chopped
1 tsp garlic powder or dried minced garlic
½ tsp sea salt
½ tsp pepper

1.    Chop all ingredients and mix with olive oil in bowl.
2.    Serve over fish.
