Created by Kahani Social Group Head Chef, Chef Jassi Bindra, a Food Network Chopped Champion and executive chef at Amrina in the Woodlands, this spot offers a unique twist on fried chicken. You can choose between Halal and non-Halal dishes, as the open kitchen is equipped with two separate fryers to prevent cross-contamination. Chef Jassi says the key to achieving moist and flavorful chicken lies in using a pressure fryer. According to Chef Jassi, the pressure fryers in the Pok Pok Po kitchen are the "Rolls Royce of pressure fryers." They work by steaming the chicken to infuse it with flavor, then releasing the steam through a valve. After that, the gluten-free batter is allowed to crisp to perfection in a bubbling bath of peanut oil. The menu is gluten-free batter, made from corn and rice starch and seasoned with a mix that includes Kashmiri chili powder, gives the chicken a delicious flavor and vibrant red color without being overly spicy.
