Criolla Grilled Chicken and Mushrooms

HOUSTON – Criolla Grilled Chicken and Mushrooms

Serves 4-6

Marinating time: 2 hours to overnight

Cooking time: 12-15 minutes

2 lbs boneless skinless chicken breast
2-4 Whole Portobello Mushrooms
1 bottle Ximenas Criolla Salsa
4 tablespoons Adams Reserve House All Purpose Rub

1. Butterfly or pound chicken down to even thickness.
2. Place in a large sealable plastic bag, pour in  1/2 bottle of criolla marinade and 2 tablespoons of rub. Allow to marinade in fridge 2 hours to overnight.
3. Place Mushrooms in separate bag and repeat process.  
4. When ready to cook, preheat grill to medium high heat.
5. Place mushrooms on one side of grill, and chicken on the other. Turn as necessary to prevent burning. Cook chicken till internal temperature reads 165, or juices run clear.
6. Cook mushrooms till they reach desired doneness.
