Ahi Tuna Burger

8 oz-Ahi or Yellow fin tuna
2 tbl- Lime ponzo sauce
1 –tbl- minced and peeled ginger
½ cup –Finely chopped scallions
1 – Large egg
6 – Slices of roma tomato
1 – Cup of spring mix
2 – tbl vinaigrette
1- tsp – Sriracha
1 -tbl Light mayo
2- Whole Wheat hamburger bun

First take the Mayo, Sriracha, and completely mix them together. Then chill in the refrigerator. Next take your 10 oz of Ahi Tuna, and mince finely on a cutting board. The place the minced Tuna in a bowl and gently incorporate your ginger, scallions and one egg. Next separate the ground Ahi into two patties. Last in a pre-heated non stick sauté pan add one tablespoon of olive oil, and then salt, pepper and place in a sauté pan. Sear on each side for 1 to 2 minutes be sure not to overcook... Then place your Ahi Burger on the bottom bun with three slices of tomatoes, and ½ cup of your spring mix salad. Last spread on one tbl of the sriracha mayo on the top bun.


½ cup or 3.7 oz seasoned rice wine vinegar
1 cup or 2.62 oz olive oil
1 Tbl Chili Garlic paste
¼ tsp salt
½ tsp ground ginger

Mix all vinaigrette ingredients together, except olive oil. Mix in olive oil and stir until fully emulsified.
