Recipe: Brisket Quesadillas

HOUSTON – If you have some brisket left in the oven, you can use it for brunch. Julio Arevalo from Coffee-Q is sharing his recipe for brisket quesadillas.
At their food truck, they combine the flavors of coffee and barbecue, making them a great place for those who wake up hungry and need their barbecue fix.  These quesadillas go great with a refreshing cold brew.

Ingredients:
•    smoked brisket
•    flour tortillas
•    Monterey and cheddar mix
•    pico de gallo (tomatoes, onions, jalapenos, and fresh lime juice)
•    green salsa

Directions:
Have the warmer plate set to high. Get two tortillas and start warming them. Flip them over and be generous with the cheese on both sides. Grab out the smoked brisket from the oven. Scoop 3 ounces of meat on the warm plate and spread in onto the tortilla.
Add and spread out evenly the pico de gallo. Top it with second cheese tortilla.  Cut and serve.
