Recipe: Watermelon-Mint Margaritas

A new spin on an old staple

Ingredients

For the mint simple syrup:

  • 1 cup sugar
  • 1/4 cup fresh mint leaves

To assemble:

  • Pink sea salt, for garnish
  • Ice
  • 3 cups seedless watermelon, pureed
  • 8 ounces silver tequila
  • 1/2 cup fresh lime juice (from about 4 limes)
  • 1/4 cup orange liqueur
  • Fresh mint, for garnish
  • 2 limes, thinly sliced, for garnish

 

Directions

For the mint simple syrup: In a medium saucepan, combine the sugar and mint with 2 cups water.  Heat over medium heat, stirring occasionally, until the sugar dissolves, about 2 minutes.  Remove from the heat and let the mint infuse for 20 minutes.  Strain the syrup and let cool; discard the mint.  Set aside 2 tablespoons of the simple syrup and reserve the rest in the fridge for up to 2 weeks.

To assemble: Spread pink sea salt over a small shallow plate.  Rub the rims of the margarita glasses with a lime wedge and then dip them into salt to coat.

In a cocktail shaker, combine the ice, pureed watermelon, tequila, lime juice, orange liqueur and reserved 2 tablespoons mint simple syrup.  Shake, then strain into the rimmed margarita glasses over fresh ice.  Garnish with fresh mint and lime slices.
