Watermelon Canapes


Citrus Marscapone

Makes about 10 bites

2 cups watermelon

¼ cup marscapone cheese

1 tsp orange zest

2 tsp juice from orange

Candied Walnuts – store bought - crushed

Diced Orange wedges for garnish

Mint for garnish

Mix orange zest, marscapone cheese, orange juice together. Cube watermelon into small bite size pieces. Remove center of watermelon with melon baller, set aside for plate garnish. Fill center of watermelon with cheese mix, top with orange wedge, a small mint leaf, and dust with cadied walnuts.


Lime Pistaschio

2 cups watermelon

½ cup Feta cheese

1 lime

¼ cup pistachios- crushed

Repeat same procedure for cubing watermelon, and removing center with melon baller. Squeeze a small amount of lime juice over top, fill with 1 tsp feta cheese, top with 1 tsp crushed pistachios, and a pinch of sea salt of Fleur de Salt.


Watermelon Jalepeno Margaritas


2 cups pureed watermelon – strained no pulp

1 cup tequila of choice

2 tbsp Gran Marnier

2 tbsp simple syrup

3 large limes- juice and zest

2-3 cups gingerale

1 jalepeno – no seeds, sliced

8 mint leaves

Muddle jalepeno and mint leaves in bottom of pitcher, add remaining ingredients. Rub rim of glass with lime, and roll in chile salt,  serve mix on the rocks. 



Grilled Golden Watermelon Salad

Seves 1-2

2 slices of Gold (Yellow) Watermelon

1 lime/1 orange- juice only

1 tbsp coconut oil

1-2 tsp sea salt


Squeeze Lime and orange over watermelon, coat with oil and salt, grill for 4-5 minutes each side.



4 cups arugula

1/3 cup champagne tomatoes or cherry tomatoes-halved

½ cup slivered onions (thinly sliced)

2 tbsp Feta – crumbled

4 tbsp cooked bacon

½ cup candied walnuts-chopped

Salt and pepper to taste



¼ cup olive oil

2 tsp balsamic vinegar

2 tsp honey


Toss all ingredients for salad together with dresssing and serve over grilled watermelon.


Pan Seared Salmon w/ Watermelon Basil & Poppy Seed Sauce


1-4 oz Salmon Fillet

1 tsp sea salt

1 tsp black pepper


Heat skillet on medium heat, add oil. Season fish and cook for about 4 minutes each side, or until desired finish.



2 cups watermelon – cubed

½ cup oranges – diced

4 basil leaves

2 tbsp coconut oil

½ tsp sea salt


Heat a skillet on medium heat, add coconut oil. Saute watermelon, oranges and basil until oranges have cooked down, about 6 minutes. Puree in blender until smooth, return to skillet. Reduce sauce on medium heat until thickened, about 5 minutes.
