Chef Adrian Watermelon Inspired Recipes!

HOUSTONChef Adrian Perez shares his recipes for watermelon gazpacho and watermelon cake.

Watermelon Gazpacho

Serves 2-4


2 cups watermelon – cubed

1 large tomato – quartered

1 cucumber – peeled no seeds

½ red bell pepper

½ cup celery

¼ cup green onions

½ lime juice

6 tbsp olive oil

1 tsp black pepper

½ tsp sea salt

2 tsp red wine vinegar

6 basil leaves


Puree all ingrdients in blender, top with microgreens, cream or croutons. Season more if desired


Watermelon Fruit Cake


1 small watermelon

1 large lime-juice

3 cup heavy cream

1 tsp raspberry extract

1 cup powdered sugar


Cut watermelon into cake shape using a plate to trace and trim. Squeeze lime juice over top and allow to soak for 1 hour.

Whip heavy cream, powdered sugar and extract with hand mixer, until fluffy peaks form.


Ice cake with spatula and decorate with fresh fruit of choice.
