Citrus Summer Marinade  

1 cup orange juice 

1/2 cup lime juice 

1/4 onion-sliced 

2 cloves garlic 

1 cup cilantro 

2-3 tsp sea salt

1 tsp cumin

1 tsp chili powder

1 tsp black pepper 

1/2 cup olive oil 


Blend all ingredients in food processor until smooth. Marinate your choice of protein in ziplock with marinade up to 24 hours. 


Chicken Veggie Skewers 

2 chicken breast-cubed

1 tsp salt

1 tsp cumin

1 tsp garlic powder 

1 tsp chili powder

1 red bell pepper-sliced

1 yellow bell pepper – sliced

1 orange bell pepper – sliced 

1 Zucchini – sliced

1 Yellow squash – sliced

1/2 cup cherry tomatoes - halved 

6 to 8 purple potatoes- halved 


Boil potatoes for 5 to 10 minutes until tender. 

Soak wooden skewers in water for 20 minutes. Remove skewers from water and skewer all vegetables, chicken, potatoes, and Grill for 6 to 8 minutes rotating every 2 minutes . 


Pineapple Mandarin Sauce

2 cups pineapple-dived

1 cup Mandarin oranges

1 Tablespoon of coconut oil

2 tablespoons of coconut cream

1/2 teaspoon red pepper flakes

1 tablespoon of lime zest

2 tablespoons of lime juice


Sauté pineapple and mandarins in skillet w/ coconut oil on medium heat until tender. Add lime zest, lime juice, and red pepper flakes. Transfer to food processor and blend until smooth. 


Summer Brussel Crunch Salad 


4 cups of shaved Brussels sprouts-sautéed in oil 1 tablespoon of olive oil for 2-3 minutes 

1/2 teaspoon of sea salt

1/2 teaspoon black pepper

1/2 red apple – Sliced

1/2 green apple – Sliced

1/2 cup grapes- halved 

2 tbsp Parmesan cheese 

2 tbsp Pine nuts


1/2 cup olive oil  

1 tbsp Dijon mustard 

1 tablespoon of apple cider vinegar

1/4 cup honey


Whisk ingredients for dressing together and toss with remaining ingredients.
