A Taste of the Keys

HOUSTON – Andy Niedenthal, executive chef at Islander Resort, A Guy Harvey Outpost, shares a couple of recipes from the Florida Keys & Key West to kick off our Florida Keys Getaway giveaway.

Shrimp Mango Tacos


1 Mango, diced

2 Red Peppers, diced

¼ cup Rice Wine Vinegar

3 tbsp. Key Lime, Lime Juice

3 tbsp. Vegetable Oil

1 bunch Cilantro

1.5 lb Key West Pinks, cooked

¼ cup black beans, cooked and rinsed

1 Red Onion, diced

Salt and Pepper To Taste

Hot Sauce

3 tbsp. Honey

Flour Tortillas

Combine all ingredients and mix well. Warm flour tortillas,  stuff with mixture and secure with knot pick.


Key Lime Pie Filling


Prepared Pie Crust

1/2 cup Key Lime Juice

4 each Past Egg Yolks

1 can Condensed Milk

Zest of 4 Key Limes

Combine all ingredients mix until smooth pour into prepared molds and bake from cold oven at 250 degrees until set
