Shrimp Veracruz over Pan Sear Fish

Ingredients:
1 pound fresh shrimp peeled & de-veined
1 tablespoon Adams Reserve Rub
2 tablespoons Ottavio Olive Oil
½ jar Cookwell & Company Veracruz
¼ cup of queso fresco, crumbled
4 tilapia fillets

Directions:
1.  Season tilapia with rub on both sides.
2.  Heat a large skillet over medium-high heat, and add oil.
3.  Pan sear fish 2-3 minutes on each side.  Set aside.
4.  Toss shrimp, rub and oil in a bowl.
5.  Sauté shrimp in a medium-high hot skillet for approximately 1-2 minutes.
6. Pour in sauce with shrimp, and warm for another 2 minutes.
7.  Pour shrimp and sauce over fish. Top with cheese, and serve hot.
