Sicilian Chicken in Calabria Sauce

Ingredients:
4   boneless, skinless chicken breasts
1   jar Orti di Calabria Marinara, Vodka or Arrabbiata Sauce    
1   package Franciacorta Radiatori or Toronado Pasta
2   tablespoons Rustico Extra Virgin Olive Oil
1   tablespoons Adam's Reserve House Rub  
3   ounces fresh, sliced mushrooms
3   ounces chopped kalamata olives
½  cup parmesan cheese


Directions:
1.    Cook the pasta according to package directions. Drain.
2.    Filet or pound each chicken breast to ½ inch thickness. Season both sides of chicken with Adams Reserve House Rub.
3.    Heat large non-stick skillet on medium-high heat. Add olive oil. Sauté chicken breasts 5 to 7 minutes per side.
4.    Add olives and mushrooms to skillet.  Sauté 3 minutes.
5.    Add Orti di Calabria Sauce. Bring to a simmer.  Reduce heat. Simmer 8-10 minutes until chicken is cooked through. Internal temp will be 170 degrees.
