Spanish Olive Oil Vegetable Sauté And Grilled Shrimp Skewer

Serves: 4

INGREDIENTS:

½ white onion, chopped
1 Tbs. Adams Reserve House Rub
3 Tbs. Ottavio Spanish Olive Oil
2 Yellow Squash diced
2 Zucchini, diced
4 Roma Tomatoes cut into eighths
1 Lime

DIRECTIONS:

Heat a large frying pan to medium-high and add Ottavio Olive oil.

Add onions and House Rub. Cook 5 minutes.

Add remaining ingredients and simmer 8-10 minutes. Finish with lime squeeze

Optional: Brush skewed shrimp (51/60) with Ottavio Olive Oil and Sprinkle Adams reserve Citrus seafood rub, and grill on medium-high heat for three minutes on each side. Squeeze lime over shrimp.
