Grilled Halibut

INGREDIENTS:

4 (6-8 ounce) fillets halibut

1 lime, cut into wedges

salt and pepper to taste

3 garlic cloves, coarsely chopped

1/2 cup fresh cilantro, chopped

1 tablespoon fresh lime juice

2 tablespoon unsalted butter

1 tablespoon Ottavio Olive Oil

 

INSTRUCTIONS:

1.  Pre-heat grill to 450 degrees.  Squeeze the juice from the lime wedge over the halibut fillets, then season with salt and pepper. 

2.  Grill the halibut for 4-5 minutes on each side or until the internal temperature reaches 145 degrees.  After the fish is cooked, remove from grill and place on a serving plate.

3.  Heat the oil over medium heat.  Add the garlic; cook and stir until fragrant, about 2 minutes.  Add the unsalted butter and continue to stir.  While the butter is melting squeeze in the lime juice and add the cilantro.  Serve the halibut with the cilantro butter sauce on top.
