Organizers at the third-annual Galveston Island Shrimp Festival have been working up an appetite. The white tents are up for more than 80 amateur and professional shrimp cookoff teams.

Organizers say 20,000 visitors will be ready for a taste.

"The public can come out and purchase a gumbo stroll tasting cup and taste all the gumbo from all the participating teams," said Erin Dhonau, festival organizer.

Chefs are battling for top prizes in classic categories like shrimp gumbo and shrimp bisque.

Visitor Mark Houts said he may not be an official judge, but he has his own list of qualifications to make a superior gumbo chef.

"Looks clean and confident and like they've sampled a few themselves," Houts said.

Three full days of shrimp, boats, music, friends and fun starts on Friday and runs through Sunday.
