4 fresh Natural Tilapia Filets (1 to 1 ½ pounds)

2 Tablespoons Adams Reserve Rub

2 Tablespoons Ottavio Grapeseed Oil

1 Jar Cookwell and Co. Veracruz Sauce


1. Season fillets with Adams rub on both sides; let stand 5 minutes.

2.  Heat a large skillet over Medium-High heat.  Add 1 tablespoon oil; tilt skillet to coat bottom.  Heat until pan just begins to smoke. Cook fillets in 2 batches, 2 ½ to 3 ½ minutes per side, so as not to crowd fish in pan, until lightly browned. Add remaining oil to pan between batches.

3. Remove fish to a warm platter. 

4. Top with heated Veracruz sauce and serve with rice or pasta.
