Tip: Mirin

Mirin, a sweet rice wine used for cooking, is used as a seasoning and sweetener. During cooking, the alcohol evaporates, leaving a sweet flavor and glaze that is distinctly Japanese. Mirin is available in Asian markets and in the gourmet or Asian section of many supermarkets.
