Brushetta, Fried Ravioli

Simple and Fresh Bruschetta
Preparation Time: 10 minutes
Cooking Time: 5 minutes

1     Purple onion, diced
1     French baguette bread, sliced thinly
5     Roma tomatoes, diced
1     package of fresh mozzarella cheese, diced
1     package of fresh basil, chopped
Ottavio Private Reserve Olive Oil
Il Villagio Aged Balsamic Vinegar

1.    Dice onion, tomatoes, cheese, and basil. Mix onions and tomatoes.
2.    Thinly slice bread, drizzle olive oil over bread, and toast bread in the oven at 425 for 5-7 minutes.
3.    Top toasted bread with tomato/onion mix then top bread with cheese and basil.
4.    Finally, drizzle balsamic vinegar and additional olive oil over bread.

Fried Ravioli
Preparation Time: 10 minutes
Cooking Time: 5 minutes

1    package of ravioli, thawed if frozen
½   Jar  Orti di Calabria Pasta Sauce, of choice    
2   cups plain or Italian bread crumbs
2   eggs
Ottavio Grapeseed Oil for frying

1.    Place breadcrumbs in shallow bowl. Whisk eggs together. Dip pasta in egg mixture then dredge in breadcrumbs.
2.    Heat oil over medium high heat until it reaches about 360.
3.    Fry pasta about 1-2 minutes per side. Serve with pasta sauce for dipping.
